Chocolate-covered strawberry mousse recipe

Ingredients:

  • 4 ounces firm, silken tofu
  • ¼ cup unsweetened almond milk
  • 1 tablespoon carob powder
  • 1 tablespoon almond butter with salt
  • ¼ cup sliced strawberries
  • 1 drop stevia, vanilla flavor
  • 1 tablespoon whipped non-dairy cream

Preparation:

  • Place sliced strawberries in the bottom of a dessert dish or in an individual dessert bowl.
  • Put tofu, almond milk, carob powder, almond butter and stevia into a blender. Blend until smooth and creamy.
  • Pour mousse on top of strawberry slices. Chill for at least one hour.
  • Top dessert with a small amount of non-dairy whipped cream. Place one strawberry on top.
