Crispy oven-'fried' chicken recipe

Fried chicken

Skinless chicken is a high-quality protein with all the essential amino acids your body needs to build muscle and stay healthy. With this recipe, you get the flavor of fried chicken with less saturated fat.

Ingredients

1 1/4 lb chicken breasts, cut into four pieces
2 egg whites
2 cups crushed cornflakes
2 tsp paprika
2 tsp dried mixed herbs

Preparation (Serves 4)

Preheat oven to 425 degrees.

Place egg whites in a shallow bowl. In another shallow bowl, mix together crushed cornflakes, paprika, and mixed herbs. Dip chicken pieces into egg whites, then into cornflake crumbs to coat.

Place dipped chicken on a baking tray coated with nonstick cooking spray. Cook for 20 to 25 minutes, turning the chicken halfway through.
